Confiture pastèque – agrumes
Watermelon and citrus jam
Au début, j’ai trouvé ça bizarre… mais ça valait vraiment la peine d’essayer. Je vous la recommande chaudement !

Ingrédients :
1 pastèque,
3 gros citrons,
4 oranges juteuses,
2 kilos de sucre cristallisé,
2 gousses de vanille,
5 cl de liqueur de goyave.
Ingredients:
1 watermelon,
3 big lemons,
4 juicy oranges,
2 kilos caster sugar,
2 vanilla pods,
5 table spoon guava liquor.
Préparation :
Laver et brosser les fruits.
Couper la chair de la pastèque en petits morceaux. Mettre les pépins dans un 1/2 verre d’eau et réserver.
Prélever le zeste d’un citron et d’une orange et les hacher finement.
Peler les oranges et les citrons à vif et hacher la pulpe.
Mettre tous les fruits dans une bassine et les mixer avec un mixeur plongeant.
Verser ensuite le sucre, les gousses de vanille fendues et leur graines prélevées.
Bien mélanger et laisser macérer une nuit.
Transférer la confiture dans une bassine en cuivre ou une autre marmite adéquate.
Égoutter les graines de pastèque et verser l’eau dans la confiture.
Porter à ébullition sur feu vif. Remuer et baisser le feu.
Laisser cuire pendant 4 heures en remuant de temps en temps et plus souvent pendant les 30 dernières minutes.
Coupez le feu et ajouter la liqueur. Bien remuer et verser tout de suite dans des pots bien propres.

How to proceed:
Wash and brush the fruits.
Dice the watermelon. Put the seeds in half a glass water and keep it on the side.
Withdraw the zest of a lemon and an orange and chop it very finely.
Peel the remaining lemons and oranges and chop the pulp.
Put all the fruits in a large basin and blend it using an immersion blender.
Poor the sugar and the split vanilla pods and their beans removed and added to the mixture.
Mix it all well and leave it to infuse the whole night.
Decant the jam in a copper basin or a suitable cooking pot.
Drain the watermelon seeds and add the water to the mixture.
Bring it to a boil on high heat. Stir then lower the heat.
Cook for about 4 hours. Stir now and then and frequently during the last 45 minutes.
Turn off the heat and the liquor. Stir and poor the jam in clean jars.
